On the never ending quest to get the family to eat healthy I am also searching out new recipes. One of my favourite sources is the local health food shop and it's vegetarian deli/cafe. While I am looking through the glass at that days selections I take secretly pictures of the dishes and their ingredients with my phone. The recipes aren't there but I am just (barely) smart enough to figure it out from the ingredients list. I took this picture the other day and tried some of the salad which was GOOD
So I tried making it myself. This is my recipe
1/2 a watermelon cubed(approx 6-8 cups)
in a small bowl mix together
The juice of one lime (mine was pretty juicey)
1/2 cup cress minced
3 tbsp cilantro minced
1/2 a jalapeno, seeded and very finely minced
1/2 tsp salt
Toss the watermelon with the dressing and it looks like this

It is not too spicy for kids. It has just a warm kick to it but make sure to really finely diced the jalapeno |
It was as good as the one at the cafe and I will absolutely make it again. Wonderful on a hot day.
